INGRÉDIENTS
- Vegetables - 🥬 1/2 bunch spinach
- 🧅 1/2 cup chopped green onion
 
- Condiments - 1 tbsp doenjang (soybean paste)
- 🧂 Soy sauce to taste
 
- Broth - 3 bowls rice water
- 🐟 1 cup dried anchovies
 
- Seasoning - 🧄 1 tsp minced garlic
 
ÉTAPES
Prepare rice water by collecting the third rinse water from washing rice.
Wash and trim 1/2 bunch of spinach. Gently crush the spinach leaves and stems until green juice is released.
Rinse the crushed spinach and drain the water.
In a pot, boil the rice water and add 1 cup of dried anchovies. Simmer for 5 minutes.
Remove the anchovies from the broth.
Add the prepared spinach to the broth. Use 2 cups of spinach for this recipe.
Add 1 tsp of minced garlic to the pot.
Once the spinach is cooked and fragrant, add 1 tbsp of doenjang (soybean paste). Stir well to dissolve.
Simmer the soup for another 5 minutes.
Add 1/2 cup of chopped green onion to the soup.
Taste the soup and adjust the seasoning with soy sauce or salt as needed.
Serve the soup hot and enjoy.
