ÉTAPES
Clean and prepare the bean sprouts by removing the heads and washing thoroughly.
Rinse the seafood substitute and marinate in cooking wine for 10 minutes to remove any fishy smell.
Prepare the vegetables: chop water dropwort, slice onion, and chili peppers, and chop green onion.
Place bean sprouts in a wok without adding oil or water, then layer the seafood substitute on top. Cover and steam for about 10 minutes until the bean sprouts wilt.
Mix all seasoning ingredients into a sauce, adjusting spice and salt levels to taste.
Add sliced onion and the prepared sauce to the wok, spreading evenly over the seafood and bean sprouts.
Stir gently to combine the sauce with the bean sprouts and seafood.
Add the corn starch mixture to thicken the sauce, then add water dropwort and let simmer for 5 minutes.
Turn off the heat, add sesame oil, and sprinkle sesame seeds to finish.
Serve on a plate and enjoy while hot.
