Seasonings
- 2 tbsp red pepper powder
- 🧂 4-5 tbsp soy sauce
- 🧂 2 tbsp Korean soy sauce
- 1 tbsp plum extract
- 🧄 1 tbsp minced garlic
- 1 tbsp cooking wine
- 0.3 tbsp minced ginger
- 1 tbsp sesame oil
- 🧂 A pinch of black pepper
ÉTAPES
Slice the radish into thick pieces (about 0.7 cm) to prevent it from breaking during cooking.
Soak the dried pollock in water, then squeeze out excess moisture. Prepare shiitake mushrooms and green onions.
Layer the radish, dried pollock, and shiitake mushrooms in a wide pot. Optionally, add green chilies for extra spice.
Mix the seasoning ingredients (red pepper powder, soy sauce, Korean soy sauce, plum extract, minced garlic, cooking wine, minced ginger, sesame oil, and black pepper) to create the sauce.
Pour water, rice water, or broth into the pot until the radish is submerged. Bring to a boil over high heat.
Once boiling, skim off any foam, cover the pot, and simmer over medium-low heat until the radish is tender.
Reduce the liquid to half, stirring occasionally to prevent burning. Serve once the radish is fully cooked and tender.
