INGRÉDIENTS
Main Ingredients
- 🧈 400-500g firm tofu
- 200g small can of spam
- 1 king oyster mushroom
- 200g ripe kimchi
- 3 tbsp vegetable oil
- 💧 500cc water
- 1 green chili
- 2 pinches black pepper
Seasonings
- 🍬 1 tbsp sugar
- 1 tbsp red chili powder
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp anchovy sauce
- 1 tbsp oyster sauce
- 1/2 tbsp gochujang
- 1/2 tbsp doenjang
- 🧄 1 tbsp minced garlic
ÉTAPES
Cut tofu into 2cm thick slices and set aside. Use firm tofu for better texture.
Slice king oyster mushroom into 2cm thick pieces.
Cut spam into 1-2cm thick slices. Optionally blanch in boiling water for 10 seconds.
Mix kimchi with all seasonings in a bowl until well combined.
Heat vegetable oil in a pan and fry spam until golden brown. Reserve the oil.
Add seasoned kimchi to the pan with reserved oil and stir-fry for 2-3 minutes.
Add water to the pan and bring to a boil. Add tofu, mushrooms, and fried spam.
Add chopped green chili and black pepper. Simmer for 3 minutes.
Taste and continue simmering until desired consistency is achieved.
