Wash 400g of chicken thighs thoroughly.

Pat the chicken dry with a kitchen towel and poke holes with a fork for better seasoning absorption.

Marinate the chicken with 1 tbsp cooking wine, a pinch of salt, and a dash of pepper for 30 minutes.

Cut garlic stems or peppers into bite-sized pieces.

Mix all seasoning ingredients: 2 tbsp soy sauce, 1 tbsp sugar, 2 tbsp corn syrup, 1 tbsp vinegar, 2 tbsp water, and 1 tbsp minced garlic.

Heat a pan and place the marinated chicken thighs skin-side down to sear.

Adjust between high and medium heat, frying the chicken until the blood disappears and the chicken is cooked.

Cut the cooked chicken into bite-sized pieces and pour the seasoning mixture over it. Cook until the sauce thickens.

Cook for about 5 minutes until the sauce is reduced and the chicken is well-coated.
