- 1/2 portion cooked udon noodles
 - 🥚 1 egg
 - 🍤 3 peeled shrimp (45g)
 - A small amount of mitsuba
 - 150ml unsweetened soy milk
 
Seasoning
- 1 tsp mirin
 - 🧂 1/4 tsp salt
 - 1/4 tsp Japanese granulated dashi
 
ÉTAPES
Prepare a microwave-safe bowl and place the cooked udon noodles inside.
In a separate bowl, whisk the egg and mix it with soy milk, mirin, salt, and dashi until well combined.
Pour the egg mixture over the udon noodles in the microwave-safe bowl.
Add the peeled shrimp and mitsuba on top of the mixture.
Microwave the bowl on medium heat for about 5 minutes or until the egg mixture is set.
Let the dish cool slightly before serving.
