ÉTAPES
Slice half an onion and divide the enoki mushrooms into thirds.
Heat oil in a pan over medium heat and sauté the onions until fragrant.
Add enoki mushrooms and stir-fry until slightly wilted.
Add soy sauce, mirin, and water to the pan and simmer until the sauce thickens slightly.
Serve over a bowl of rice, placing the egg yolk on top and surrounding it with the enoki mushroom mixture.
