- 2 broth cubes
- 1 tbsp soy sauce
ÉTAPES
Slice the potato into medium-thick flat pieces.
Beat the eggs in a bowl until smooth.
Dissolve the broth cubes in 500ml of water to create a rich stock.
Bring the stock to a boil and add the sliced potatoes. Cook until they are partially tender.
Season the soup with soy sauce once the potatoes are halfway cooked.
Pour the beaten eggs slowly into the soup in one direction and let it sit for 2 minutes without stirring.
Gently scrape the bottom of the pot and skim off any foam that rises. Adjust the seasoning with salt if necessary.
