INGRÉDIENTS
Main
- 🥩 70g thinly sliced pork belly
 - 25g mentaiko (1/2 piece)
 - 🧀 30g pizza cheese
 - 🥬 150g chopped cabbage
 - 1 tbsp salad oil
 
Batter
- 100g all-purpose flour
 - 1 tsp Japanese dashi powder
 - 💧 100ml water
 - 🥚 1 egg
 - 2 tbsp tempura bits
 
Toppings
- to taste okonomiyaki sauce
 - to taste mayonnaise
 - to taste bonito flakes
 - to taste aonori (seaweed powder)
 
ÉTAPES
Chop the cabbage into coarse pieces.
Cut the mentaiko into 4 equal pieces.
Slice the pork belly into 4cm wide pieces.
Mix flour, dashi powder, and water in a bowl. Add the egg, tempura bits, and cabbage, mixing gently to incorporate air. Add mentaiko and mix again.
Heat salad oil in a frying pan. Spread the batter into a round shape and place pork slices evenly on top. Cook over medium heat until browned. Flip using a large plate and return to the pan. Sprinkle cheese on top, cover, and cook over low-medium heat until fully cooked.
Serve on a plate and add toppings: okonomiyaki sauce, mayonnaise, bonito flakes, and aonori.
