- 1kg pork ribs
- 3-4 bay leaves
- 15 whole black peppercorns
- 60ml soju
- 3 slices of ginger
Sauce Ingredients
- 1 tbsp oyster sauce
- 2 tbsp tonkatsu sauce
- 🍅 2 tbsp ketchup
- 3 tbsp soy sauce
- 1 tbsp plum extract
- 3 tbsp corn syrup
- 🧄 1 tbsp minced garlic
- 💧 200ml water
ÉTAPES
Clean the pork ribs thoroughly and remove the thin membrane on the inner side. Place the ribs in a pot, add enough water to cover them, and include bay leaves, black peppercorns, ginger slices, and soju. Boil for 30 minutes, skimming off any foam. Rinse the ribs in cold water and cut between the bones.
Mix oyster sauce, tonkatsu sauce, ketchup, soy sauce, plum extract, corn syrup, and minced garlic to prepare the sauce.
Place the boiled ribs in a pan, add the prepared sauce and water. Simmer on low heat for 20 minutes, stirring occasionally until the sauce thickens and coats the ribs.
Plate the ribs nicely, drizzle the remaining sauce over them, and sprinkle sesame seeds for garnish.
