INGRÉDIENTS
Dough
- 250g strong flour
- 🧂 25g sugar
- 🧂 4g salt
- 5g instant dry yeast
- 🥚 1 egg (55g)
- 🥛 115g milk
- 6g instant coffee
- 🧈 25g unsalted butter
Filling
- 🧈 20g unsalted butter
- 1g instant coffee
- 🧂 25-30g sugar
- 1/2 tsp cinnamon powder
- 🍫 50g chocolate chips
Decoration (Icing)
- 30g powdered sugar
- 🥛 A small amount of milk
ÉTAPES
Dissolve the instant coffee in milk.
Combine all dough ingredients except butter and knead for 5 minutes.
Add butter and knead for another 15-20 minutes until smooth.
Let the dough rise in a warm place (40°C) for 50 minutes.
Punch down the dough to release gas.
Cover with plastic wrap and let rest for 15 minutes.
Roll the dough into a rectangle (30cm x 25cm).
Melt butter and coffee for the filling.
Spread melted butter over the dough, leaving a small edge uncovered.
Sprinkle cinnamon sugar and chocolate chips evenly over the dough.
Roll the dough tightly and seal the edge.
Cut into 8 equal pieces (or 10 for smaller rolls).
Place rolls in muffin tins and let rise in a warm place (40°C) for 30 minutes.
Bake at 180°C for 12-15 minutes until golden brown.
Mix powdered sugar and milk to make icing and drizzle over cooled rolls.
