ÉTAPES
Clean the mini pumpkins thoroughly using baking soda as the skin will be eaten.
Place the pumpkins with the stem side down and microwave for 3 minutes. You can wrap them in plastic wrap if preferred.
Cut off the stem part to create a lid. Scoop out the insides using a spoon.
Finely chop the onion and set aside.
Fill the hollowed pumpkins with half of the chopped onion and a pinch of salt.
Crack an egg into each pumpkin and poke the yolk with a fork to prevent it from bursting during microwaving.
Top with a generous amount of cheese and microwave for 5 minutes until the cheese melts.
