    • 🥚 1 egg
    • 300g nagaimo
    • 1 tbsp mentsuyu (3x concentrated)
    • 1 tbsp salad oil
  • Toppings

    • Chopped green onion, as needed
    • 1/2 packet katsuobushi (2g)

Cut open the mentaiko and extract the contents. Reserve half for topping and use the rest for the batter.

Place the nagaimo in a storage bag and crush it with a rolling pin.

In a bowl, crack the egg and mix it. Add the crushed nagaimo, batter-use mentaiko, and mentsuyu, then mix to form the batter.

Heat salad oil in a frying pan over medium heat. Pour in the batter and cover with a lid. Cook on low-medium heat for about 3 minutes until golden brown. Flip using a plate and cook for another 2 minutes until golden brown.

Serve on a plate and top with reserved mentaiko, chopped green onion, and katsuobushi.
