INGRÉDIENTS
- Rice - 🍚 1 cup soaked rice
 
- Protein - 🍗 100g chicken thigh
 
- Vegetables - 🍄 50g maitake mushrooms
- 2g dried hijiki
- A pinch of mitsuba
 
- Seasoning - 1 tbsp mirin
- 1/2 tbsp soy sauce
- 1/2 tsp dashi powder
 
- Liquid - 💧 Enough water to reach 1 cup mark
 
ÉTAPES
Soak dried hijiki in water according to package instructions and drain. Break maitake mushrooms into small clusters.
Cut chicken thigh into 2cm cubes.
In a rice cooker, add soaked rice, seasonings (mirin, soy sauce, dashi powder), and water up to the 1-cup mark. Mix well and flatten the rice.
Place hijiki, maitake mushrooms, and chicken on top of the rice. Cook using the regular rice setting.
Once cooked, gently mix the rice and toppings. Serve in bowls and garnish with mitsuba.
