    • 1 tbsp sesame oil
    • 1 tbsp sesame seeds

Prepare the sauce by mixing gochujang, chili powder, spicy chili powder, sugar, and soy sauce. Store extra sauce in the fridge for future use.

Julienne the cucumber and chop the kimchi into small pieces (1-1.5 cm).

Boil somen noodles in 14 cups of water for 3 minutes. Add 3 cups of cold water and boil for another 2 minutes.

Rinse the noodles in cold water or ice water to remove starch and ensure a chewy texture.

In a large bowl, mix the chopped kimchi with 1 tbsp of the prepared sauce. Knead the mixture to blend the flavors.

Add sesame oil and sesame seeds to the mixture and toss well.

Plate the noodles, top with julienned cucumber, boiled egg, and sprinkle sesame seeds.
