INGRÉDIENTS
Fish
- 4 fillets horse mackerel (140g)
 
Vegetables
- 🥒 1 zucchini
 - 🧅 1/2 onion
 - 1/2 red bell pepper
 - 🌿 1/4 bunch cilantro
 
Seasoning
- 🧂 Pinch of salt
 - 1 tbsp flour
 - 1 1/2 tbsp olive oil
 
Sauce
- 🥥 400ml coconut milk
 - 2 tsp curry powder
 - 1 1/2 tbsp fish sauce
 
ÉTAPES
Cut zucchini into 1cm slices, onion into 1cm slices, and red bell pepper into 3cm pieces.
Pat horse mackerel fillets dry, sprinkle with salt, and coat with flour.
Heat 1 tbsp olive oil in a pan, place horse mackerel skin-side down, and fry for 2 minutes until golden.
Push fish to the side, add remaining olive oil and vegetables, stir until coated with oil.
Add coconut milk, curry powder, and fish sauce, simmer for 5 minutes. Serve with cilantro garnish.
