INGRÉDIENTS
Plain Dough
- 🧈 340g butter
- 200g powdered sugar
- 🥚 80g egg yolk
- 🧂 1 tsp salt
- 300g cake flour
- 200g rice flour
- 50g cornstarch
- 70g chopped pistachio
- 70g almond slices
- 70g chopped walnut
Chocolate Dough
- 🧈 340g butter
- 200g powdered sugar
- 🥚 80g egg yolk
- 🧂 1 tsp salt
- 240g cake flour
- 200g rice flour
- 40g cocoa powder
- 2 tsp instant coffee powder
- 50g cornstarch
- 50g chocolate chips
- 30g pecan
- 70g chopped walnut
- 70g almond slices
ÉTAPES
Soften butter at room temperature and whisk until smooth.
Add sifted powdered sugar and mix well.
Add egg yolks and salt, then mix until combined.
Sift in cake flour, rice flour, and cornstarch, then mix until crumbly.
Divide the dough into three portions and mix in pistachio, almond slices, and walnuts separately.
Shape each portion into a rectangular log on parchment paper.
Wrap the logs in parchment paper and chill in the refrigerator for at least 3 hours.
Slice the logs into 1cm thick pieces and bake in a preheated oven at 170°C for 16-18 minutes.
For chocolate dough, follow the same steps but add cocoa powder and instant coffee powder to the dry ingredients.
