- 1 green chili
- 1 red chili
- 1.5 cups cornstarch
- 💧 4 tbsp water
- 6 tbsp vegetable oil
- 🥚 1/2 egg
Seasoning
- 1 tbsp soy sauce
- 2 tbsp oyster sauce
- 🍬 1 tbsp sugar
- 2 tbsp vinegar
- 💧 2 tbsp water
ÉTAPES
Cut the eel into bite-sized pieces and marinate with salt, pepper, ginger juice, and cooking wine.
Slice the green onion and finely chop the green and red chilies.
Prepare the batter by mixing cornstarch, water, and egg until it reaches a mayonnaise-like consistency.
Coat the eel pieces in the batter and mix gently.
Deep-fry the eel at 180°C until golden brown.
Heat oil in a pan and stir-fry the green onion and chopped chilies.
Add the seasoning mixture (soy sauce, oyster sauce, sugar, vinegar, and water) and simmer briefly.
Add the fried eel to the pan and toss well to coat with the sauce.
