Fish
- 🐟 400g pollock fillets
Egg
- 🥚 2-3 eggs
Flour
- 1/2 cup batter flour
Seasoning
- 🧂 1 tbsp salt
- A pinch of ground pepper
- 2 drops sesame oil
Liquid
- 1 tbsp mirin
- 💧 3.5 cups water
- 2 tbsp cooking oil
ÉTAPES
Thaw frozen pollock fillets in the refrigerator for 4 hours.
Mix 1 tbsp salt with 3.5 cups of water to create a brine. Add the thawed pollock fillets and 1 tbsp mirin to the brine. Let them soak for 20-30 minutes.
Drain the fillets and pat them dry with paper towels to remove excess moisture.
Sprinkle a pinch of ground pepper on the fillets.
Lightly coat the fillets with batter flour, shaking off any excess.
Prepare the egg mixture by whisking 2-3 eggs with 2 drops of sesame oil. Optionally, add a tiny pinch of salt for extra flavor.
Heat cooking oil in a pan over low heat. Dip the flour-coated fillets into the egg mixture and place them in the pan. Cook until golden brown on both sides.
