- 550g fresh knife-cut noodles
- 200g clams
- 1/2 zucchini
- 1/3 small carrot
- 🧅 1/2 medium onion
- 1/2 stalk green onion
- A pinch of black pepper
- 1 tbsp tuna sauce or soy sauce
- 🧂 Salt to taste
Broth Ingredients
- 6-8 dried anchovies or sand lance
- 5 sheets of dried kelp
- 1 handful of dried shrimp
- 💧 1700ml water
ÉTAPES
Prepare vegetables: slice zucchini, carrot, onion, and green onion as desired.
Clean and de-sand clams thoroughly.
Make the broth: boil dried anchovies, kelp, dried shrimp, and water for 5-10 minutes.
Add cleaned clams to the boiling broth and cook until they open. Remove clams and set aside.
Boil the knife-cut noodles in separate water for 5 minutes, then drain.
Add vegetables to the broth and simmer until tender. Then add clams and noodles.
Season with tuna sauce or soy sauce, adjust salt to taste, and sprinkle black pepper.
