INGRÉDIENTS
Fish
- 🐟 2 fillets (300g) flounder
Vegetables
- 60g sliced bamboo shoots
- 🥕 1/3 carrot, julienned
- 1 bell pepper, sliced
Seasoning
- 🧂 Pinch of salt
- 1 tbsp cornstarch
- Enough salad oil for frying
- 1 tbsp sesame oil
Sauce
- 1 tbsp sake
- 🧂 1/3 tsp salt
- 1/2 tsp chicken stock powder
- Pinch of pepper
- 💧 120ml water
Thickener
- 1/2 tbsp cornstarch
- 💧 1/2 tbsp water
ÉTAPES
Julienne the carrot and slice the bell pepper after removing seeds and stem.
Sprinkle salt on the flounder fillets, let sit for 5 minutes, then pat dry and coat with cornstarch.
Heat salad oil to 170°C in a pot, fry the flounder for 2–3 minutes until crispy.
Heat sesame oil in a pan, stir-fry bamboo shoots and carrot until carrot softens, then add bell pepper and stir briefly.
Add sauce ingredients to the pan, bring to a boil, then thicken with cornstarch slurry while stirring.
Plate the fried flounder and pour the vegetable sauce over it.
