Prepare all ingredients by dicing carrots, bell pepper, and slicing the white part of the green onion.

Tear crab sticks into bite-sized pieces.

Heat 3 tbsp of vegetable oil in a pan and stir-fry the white part of the green onion on high heat for 2 minutes to create aromatic green onion oil.

Add diced carrots and bell peppers to the pan and stir-fry on high heat for another 2 minutes.

Push the vegetables to one side of the pan, crack the eggs into the empty space, and scramble them until cooked.
