- 1/2 block cheonggukjang
- 🥬 1 handful kimchi
- 1/2 ladle kimchi juice
- 🐖 1 handful pork
- 🧅 1/3 onion
- 🍶 1/2 block tofu
- 🧅 1/2 stalk green onion
Seasonings
- 2 tbsp chili powder
- 🧂 1 tsp sugar
- 2 tbsp mirin
- 🧄 0.5 tbsp minced garlic
- 1 tbsp doenjang
- 1 tbsp soy sauce
- 🧂 to taste salt
ÉTAPES
Add chopped kimchi, pork, sugar, chili powder, garlic, and mirin to a clay pot.
Cook on medium-low heat until the pork is about one-third cooked, stirring occasionally.
Meanwhile, chop onion, tofu, and green onion into appropriate sizes.
Add rice water to the pot, followed by kimchi juice, doenjang, and soy sauce. Bring to a boil on high heat.
Once the pork is fully cooked, add cheonggukjang and stir to dissolve.
Add tofu and onion, cooking until the onion is slightly softened.
Adjust seasoning with salt if needed, garnish with green onion, and simmer briefly before serving.
