ÉTAPES
Remove the skin from the chicken and place it in a pot with enough water to cover. Add aromatics and bring to a boil. Cook on high heat for 10 minutes, then reduce to medium heat and simmer for 30 minutes.
Remove the cooked chicken, separate the meat from the bones, and return the bones to the pot. Simmer on medium heat for 20 minutes to extract the broth.
Prepare the seasoning mixture by combining red pepper powder, minced garlic, green onion, green chilies, and soy sauce.
Strain the broth to remove the aromatics, then add the seasoned chicken meat back into the pot. Bring to a boil and season with salt to taste.
