- 1 tbsp cinnamon powder
- 🥕 1 cup finely chopped carrot
- 🌰 1/2 cup chopped walnuts
- 1 tbsp baking powder
- 1 cup canola oil
- 1 tsp baking soda
- 1/2 cup raisins (optional)
ÉTAPES
Toast walnuts in the oven for 5 minutes and chop finely.
Wash and finely chop the carrot. About half a carrot yields one cup.
Mix flour, baking powder, baking soda, and cinnamon powder together.
Soak raisins in rum, water, or wine for added flavor.
Whisk canola oil and eggs one by one, then add brown sugar and mix well.
Combine the wet mixture with the dry ingredients using a spatula.
Add chopped carrots and soaked raisins to the batter.
Add toasted walnuts and mix quickly.
Line muffin tins with parchment paper and fill 70-80% full.
Bake in a preheated oven at 180°C (356°F) for 18-20 minutes.
Cool muffins on a wire rack before serving.
