    • 3 tbsp chili powder
    • 1 tbsp gochujang
    • 2 tbsp plum extract
    • 1 tbsp cooking wine
    • 1 tbsp corn syrup
    • 🧄 1 tbsp minced garlic
    • 💧 1/2 cup water

Soak the mackerel pieces in rice water for 10 minutes to remove odor and firm up the flesh.

Remove the fish from the rice water, pat dry, and sprinkle salt on both sides. Let it sit for 10 minutes.

Slice the onion thickly and layer it on the bottom of a pot.

Mix all seasoning ingredients: soy sauce, chili powder, gochujang, plum extract, cooking wine, corn syrup, minced garlic, and water.

Place the mackerel on top of the onion layer and evenly pour the seasoning mixture over the fish.

Cook on high heat until boiling, then reduce to medium heat and simmer uncovered for 10 minutes to remove any remaining odor.

Cover the pot and simmer on low heat for another 5–10 minutes until the fish is fully cooked and the flavors meld together.
