INGRÉDIENTS
Dry Ingredients
- 🌾 200g rolled oats
- 85g self-raising flour
- 40g dried fruit
- 🌰 25-40g chopped nuts
- 🧂 70g brown sugar
- 1/2-1 tsp cinnamon powder
Wet Ingredients
- 🧈 125g melted butter
- 3 tbsp golden syrup
- 🍌 2 mashed bananas
- 🥚 1 egg
ÉTAPES
Preheat the oven to 160°C. Chop the nuts and dried fruits into bite-sized pieces. If you don't have self-raising flour, mix 85g plain flour with 1 tsp baking powder.
Combine rolled oats, self-raising flour, brown sugar, and cinnamon powder in a bowl. Adjust cinnamon to taste or omit if preferred.
Add mashed bananas, golden syrup, melted butter, and egg to the dry mixture. Stir until well combined.
Mix in 2/3 of the chopped nuts and dried fruits. Pour the batter into a greased or parchment-lined baking pan (22cm square recommended).
Top the batter with the remaining nuts and dried fruits. Bake in the preheated oven for 20-25 minutes. Check for doneness after 20 minutes and bake longer if needed for a golden finish.
Cool the baked flapjack completely before cutting into 8-12 pieces. Store in the fridge and consume within a week.
