Bacon Tofu Kimchi

    • 1 block firm tofu
    • 7 slices bacon
    • 1/4 head kimchi
    • 🧅 2 onions
    • 1/3 cup kimchi juice or water
    • 1 tsp honey or sugar

Prepare thick-cut bacon from the freezer, one block of tofu, and two onions. Optionally, add green onions for extra flavor.

Cut the tofu into pieces and blanch it in boiling water until heated through.

Slice the bacon into 1cm pieces and fry in a heated pan until golden and crispy over medium heat.

Add thickly sliced onions to the pan and stir-fry with the bacon for about 1 minute over high heat.

Add the kimchi, using an equal or slightly larger amount compared to the bacon, and stir-fry over high heat.

Pour in 1/3 cup of kimchi juice or water and stir-fry until the liquid evaporates. If the kimchi is salty, use water instead.

Turn off the heat and mix in 1 tsp of honey or sugar. If you prefer less sweetness, skip the honey. If using sugar, add it earlier while stir-frying.

Slice the blanched tofu into bite-sized pieces and plate it alongside the bacon kimchi stir-fry. Sprinkle sesame seeds on top before serving.
