    • 1 ½ cups white sugar
    • 1 cup shortening

    • ¼ teaspoon baking powder
    • 2 cups finely shredded zucchini
    • 1 cup chopped walnuts (Optional)
    • 2 teaspoons vanilla extract

Preheat the oven to 325°F. Soak raisins in hot water until plump, about 10 minutes. Drain.

Inspect four pint-sized jars for cracks. Wash jars, lids, and rings, then grease jars with shortening.

Beat sugar, 1 cup shortening, and eggs in a bowl with an electric mixer until creamy. Mix in raisins. Add flour, cinnamon, baking soda, salt, and baking powder. Blend well.

Fold in zucchini, walnuts (optional), and vanilla. Pour batter into jars, filling each 2/3 full. Arrange jars on a baking sheet.

Bake in preheated oven for about 1 hour, until a toothpick inserted into the center comes out clean. Leave jars in the oven with the heat off.

Remove jars one at a time using oven mitts. Trim excess cake, clean rims, and screw lids on tightly.

Place sealed jars on a cloth-covered surface. Let cool completely until sealed, about 2 hours. Store in the refrigerator.
