SCHRITTE
Prepare Grana Padano cheese by grating it finely.
Julienne the potatoes thinly without soaking them in water.
Mix the julienned potatoes with salt, pepper, and 4 tbsp of Grana Padano cheese.
Heat a pan and fry the potato mixture, shaping it into a round pancake. Cook until golden brown on both sides.
Prepare a poached egg or a sunny-side-up egg.
Place baby greens and the poached egg on top of the potato pancake.
