ZUTATEN

  • Rice

    • 🍚 2 cups cooked rice
  • Beef

    • 🥩 300g steak beef (ribeye)
  • Vegetables

    • 1 pack durup (spring greens)
  • Condiments

    • 1 tsp mustard
    • 1 tbsp steak sauce
    • 🧂 1 pinch salt
    • 🌰 1 pinch sesame seeds
    • A dash sesame oil
  • Sushi Vinegar

    • 2.5 tbsp apple vinegar
    • 🍬 2 tbsp sugar
    • 🧂 1/2 tsp salt

Prepare durup by trimming and blanching in salted boiling water. Rinse in cold water and soak for 10 minutes to reduce bitterness. Squeeze out water and season with salt, sesame seeds, and sesame oil.

Mix sushi vinegar ingredients and microwave for 30 seconds to dissolve sugar and salt. Combine with freshly cooked rice.

Pat dry ribeye steak with paper towels and marinate with olive oil, salt, and ground black pepper.

Pan-fry marinated steak in a lightly oiled pan for 3 minutes per side until seared.

Shape sushi rice into small portions and spread mustard on top.

Slice rested steak into thick strips and place on sushi rice. Brush with steak sauce and top with seasoned durup.
