Main Ingredients
- 1 tbsp doenjang
- 1 tbsp perilla powder
- 🥒 1/3 zucchini
- 🧅 1/2 onion
- 1 red chili
- 1 green chili
- a small amount of green onion
- 🥔 1 potato
- 🧄 1 tsp minced garlic
- a small amount of tofu
Broth Ingredients
- dried anchovies for broth
- kelp for broth
- green onion for broth
- 🧅 onion for broth
- 💧 5 cups water
SCHRITTE
Prepare the broth by boiling dried anchovies, kelp, green onion, and onion in 5 cups of water. Strain the broth once ready.
Chop zucchini, chilies, onion, and other vegetables into bite-sized pieces.
Bring the broth to a boil and add diced potatoes. Simmer until potatoes are partially cooked.
Add doenjang (soybean paste) to the broth and stir well. Add chopped vegetables and continue simmering.
Add tofu and let the stew simmer until all ingredients are cooked through.
Sprinkle perilla powder into the stew and stir well. Add green onion and chilies for garnish and simmer briefly.
