Slice the red bell pepper into thin strips after removing the stem and seeds. Thinly slice the onion. Cut the chicken thigh into bite-sized pieces.
Heat salad oil in a frying pan over medium heat and add the chicken thigh. Stir-fry until fully cooked.
Add the onion and red bell pepper to the pan. Stir-fry until the onion becomes tender.
Add the seasoning ingredients (sake, oyster sauce, ketchup) and stir quickly to combine.
