Soak chicken thigh in milk for 20 minutes to remove odor.

Rinse off the milk and prepare the chicken thigh as desired. Remove the skin if preferred.

Cut onion and green onion into appropriate sizes.

Beat the eggs in a bowl and set aside.

Heat brown rice oil in a pan and cook the chicken thigh. If skin is retained, cook skin-side down first without oil.

Once the chicken is cooked, cut it into bite-sized pieces.

Add onion and green onion to the pan and sauté until golden.

Pour water into the pan until ingredients are submerged. Season with soy sauce, mirin, and oligosaccharide.

Simmer until the sauce reduces slightly, then pour the beaten eggs evenly over the mixture.
